Homemade Turmeric Powder: What Changes When You Go Fresh

Turmeric is one of those spices that most people take for granted. It's always there in the kitchen, the jar gets refilled occasionally, and it does its job — adding colour to dal, a base note to curries, a pinch into warm milk. But if you've never used freshly made homemade turmeric powder, you might not realise how much you've been missing.

Storing turmeric powder properly

Turmeric stains everything it touches — containers, countertops, fingers. Store it in a dark glass or opaque container with a tight lid, away from direct sunlight. Light degrades the curcumin faster than anything else.

Used within 3–4 months of grinding, fresh turmeric powder stays at its best. After that it's still usable, but the colour and flavour will have mellowed considerably.
