Authentic Tamil Nadu Sambar Recipe

Here's a classic recipe using our sambar podi:

Ingredients

  • 1 cup toor dal (split pigeon peas), cooked and mashed
  • 2 cups mixed vegetables (drumstick, brinjal, pearl onions, tomato)
  • 1 small lemon-sized ball of tamarind, soaked in warm water
  • 2 tsp Supathya Sambar Podi
  • ½ tsp turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish

For Tempering

  • 2 tsp sesame oil (gingelly oil)
  • 1 tsp mustard seeds
  • ½ tsp cumin seeds
  • 2 dried red chillies
  • A sprig of curry leaves
  • A pinch of asafoetida (hing)

Method

  1. Extract tamarind juice from the soaked tamarind — you need about 1.5 cups of thin tamarind water.
  2. In a heavy-bottomed pot, heat the tamarind water with turmeric and salt. Add your vegetables and cook until tender.
  3. Add the mashed toor dal and stir well. Bring to a gentle boil.
  4. Add 2 tsp of Supathya Sambar Podi and simmer for 8–10 minutes until the raw smell of the spices disappears and the sambar thickens slightly.
  5. In a small pan, heat sesame oil and add mustard seeds. Once they splutter, add cumin, dried chillies, curry leaves, and asafoetida. Pour this tempering over the sambar.
  6. Garnish with fresh coriander and serve hot with steamed rice, idli, or dosa.

Tips for the Perfect Sambar

  • Use sesame oil — gingelly oil gives sambar its authentic Tamil Nadu flavour. Avoid refined oils.
  • Don't skip the tamarind — the sourness balances the spice and gives sambar its characteristic tang.
  • Add podi at the right time — add sambar podi after the dal goes in, and always simmer for at least 8 minutes to cook out the raw spice taste.
  • Drumstick (murungakkai) is non-negotiable — if you can find it, add it. It elevates the flavour profile completely.
